Zapallitos Pie (Uruguay)

The Zapallitos Pie is a savory pie of Uruguayan origin. I read about how it was made, but of course, like all my recipes, this is my version.
Initially, I thought it would be good, then when I put it on the table, it was a huge success. Imagine that even my son, who doesn’t eat many vegetables, wanted to eat it all!!!
It is simple to make, but above all, it will win over your guests at the table!
It’s a savory pie that perfectly solves a nice dinner. If you want, you can prepare it, put it in the fridge, and cook it later in the day.

Ingredients for making Zapallitos Pie

  • 1 3/4 cups Flour 0
  • 1 tsp Curry
  • 1/3 cup White wine
  • 1/4 cup Extra virgin olive oil
  • to taste Salt
  • 1.1 lbs Zucchini
  • 1 Medium onion
  • 2 cloves Garlic
  • 1 Medium bell pepper
  • to taste Pepper
  • 2 Eggs
  • 1 cup Grated Parmigiano Reggiano
  • 3 tbsps Extra virgin olive oil
  • to taste Salt

Preparation of Zapallitos Pie

  • Let’s prepare the dough for the zapallitos
    Combine the flour, curry, white wine, oil, salt and mix well until you obtain a homogeneous dough, then place it in the fridge for 30 minutes.

    Preparation of the filling
    Prepare the onion and garlic by roughly chopping them and set aside.
    Wash a bell pepper, remove the seeds, cut it into small pieces, and set aside.
    Wash the zucchini, cut them into strips and then into pieces to obtain cubes and set aside.
    Take a non-stick pan, put the extra virgin olive oil in it and add the chopped garlic and onion, cooking them for 2 minutes, then add the bell peppers, let them flavor for another two minutes, mixing well.
    Finally, add the zucchini, pepper to taste, salt, and cook for about ten minutes or until the vegetables soften.

  • At the end of cooking, transfer the vegetable mixture to a bowl and if there is any liquid in the pan, drain it and do not put it with the vegetables.
    Let the vegetables cool for a few minutes, then add 2 beaten eggs, mix well, sprinkle with half of the grated Parmigiano, mix well and combine the ingredients well.

  • Finishing the Zapallitos Pie
    After the time in the fridge, roll out the dough and spread it round or square depending on the type of pan you want to use for your zapallitos.
    Once the dough is spread, place it in the pan where you will bake the pie, pour in the filling content, sprinkle with the remaining Parmigiano, and bake in a preheated oven at 392°F for 40 minutes.

  • Remove from the oven and preferably serve hot.
