Quick Pumpkin Fritters

Quick pumpkin fritters are really tasty and super delicious… try them to believe it !!!
Really quick recipe, I used pumpkin puree because it was a leftover from another recipe, but if you want to speed up the recipe, you can easily grate the pumpkin raw after removing the skin.
Surely a useful solution to bring to the table quickly.
I often make recipes by grating vegetables and others raw, then turning them into meatballs, fritters, etc.
You create all little heaps of dough on a baking sheet, flatten them, and off in the oven, a few minutes, and they will be cooked!
The flour indicated refers to the recipe with pumpkin puree, but if you grate the pumpkin, you will need less, so in the second case, add a little at a time.

Ingredients to make Quick Pumpkin Fritters

  • 9 oz pumpkin puree (about 21 oz raw to obtain 9 oz puree)
  • 9 oz potatoes (weight without skin)
  • 1.1 cups all-purpose flour
  • 1 egg (medium)
  • 2 tsp rosemary (chopped)
  • 1 tbsp dried oregano
  • 2 tsp salt (scant)

Preparation of Quick Pumpkin Fritters

  • First, if we want to use pumpkin puree, cut the pumpkin into slices, remove the skin and seeds, and put it in the oven at 350°F for about 20 minutes; times may vary depending on the thickness of the pumpkin.
    If instead, you use raw pumpkin, grate 9 oz of pumpkin and put it in a bowl, then peel and wash a potato, grate it as well, add the egg and spices, mix well to incorporate all the ingredients.

  • Finally, add the flour and mix until you get a firm but soft mixture.

  • Prepare the trays needed to bake our fritters, line them with parchment paper, then scoop the mixture and make all well-spaced heaps on the tray, then flatten them with the back of a spoon until they are very thin.

  • Preheat the oven to 400°F and bake for 15 minutes.
    The result will be very crispy, but if they are not thin enough, the result will be a bit soft.
