I make the quick no-rise focaccia every time I run out of bread and need something similar for lunch or dinner.
You mix water and flour with a bit of instant yeast for savory pastries, and it’s done!!!
Let’s say that on the day you bake it, it’s soft, maybe if there’s some leftover for the next day, it’s better to put it in the microwave for a few seconds, as it dries a bit, but it’s handy for emergencies.
To make our focaccia tastier, I sprinkled a mix of coarse salt with some spices on top, like mint, oregano, rosemary… but you can choose according to your taste.

Ingredients to make Quick No-Rise Focaccia
- 1 1/4 cups water
- 1 1/2 tsp salt
- 1/2 packet instant yeast for savory preparations
- 2 tablespoons extra virgin olive oil
- 4 1/3 cups all-purpose flour
- to taste coarse salt
- 1 pinch rosemary
- 1 pinch dried mint
- 1 pinch dried oregano

Preparation of Quick No-Rise Focaccia
In a large bowl, mix all the ingredients together well, form a dough ball, and let it rest for 15 minutes (skip this step if in a hurry).
Take a round baking sheet 12-13 inches in diameter, grease the base, and pour in our dough. With a greased hand, spread the focaccia well on the baking sheet and sprinkle the top with the previously chopped spice-salt mix.
Bake in a hot oven at 392°F for about 15 minutes, checking the cooking.
Once baked, remove from the oven and serve hot or cold.
