Soft Yogurt Rolls

Soft yogurt rolls are fluffy little loaves to fill as we like, perfect for birthday parties, for example.
You can fill them with jams, jellies, and chocolate, or with savory bases like cold cuts and cheeses.
These rolls, thanks to the yogurt in the dough, are really very soft and keep well for a few days if stored in a plastic bag, of course after they have cooled well.
I made them by kneading everything in the Crosutina Panasonic bread machine starting with the dry ingredients and then adding the liquids, and once the dough was made I created the rolls, as I will explain better in the preparation.
If you don’t have a bread machine, you can knead by hand or in a stand mixer, success is guaranteed.

Ingredients for making Soft Yogurt Rolls

  • 3 3/4 cups all-purpose flour
  • 1/3 cup semolina remilled durum wheat
  • 1 3/4 tsp salt
  • 2 1/4 tsp fresh yeast
  • 2/3 cup low-fat yogurt
  • 2/3 cup whole milk
  • 3.4 oz water
  • 2 tbsp butter
  • 1 1/3 tbsp milk
  • as needed poppy seeds

Preparation of Soft Yogurt Rolls

  • In the bread machine basket insert the kneading blade, add the dry ingredients and then the liquids in the order as described, taking care to put the salt on one side and the yeast on the other, to prevent them from coming into contact.
    Insert the basket into the bread machine, set the kneading program, and start the machine… my program lasts 45 minutes, but half an hour of kneading is also fine.
    Once the dough is complete, transfer everything to a large bowl and form a dough ball, cover with plastic wrap, and let rise for about 2 hours or until doubled.

  • Once risen, transfer the dough to a work surface and divide into 11 equal balls, place them on a baking sheet lined with parchment paper, score them on the surface, and let rise for about 1 hour.

  • As soon as they have risen, heat the oven and in the meantime brush the rolls with slightly warm milk and sprinkle with poppy seeds.
    Bake in a hot oven at 428°F for 20 minutes, checking the baking.

  • At the end of baking, let cool before serving and if you want to store them, let them cool well before placing them in plastic bags.
