This time, instead of making classic lamb skewers, we’ll enrich them with a super tasty breading.
The breadcrumbs we’ll use for the breading will be much tastier, and I’m sure you’ll love it.
Of course, to make them, I used the machine for making Abruzzese lamb skewers, but if you prefer, you can cut small pieces of meat and manually skewer them.
In this recipe, I used Clemente’s extra virgin olive oil, a company that produces oil, and I found it to be of excellent quality.

Ingredients for Sicilian-Style Chicken Skewers
- 16 Medium-sized chicken thighs
- 3 1/2 cups Breadcrumbs
- to taste Parsley
- 1 tbsp Extra virgin olive oil
- 2 cloves Minced garlic
- 1 tbsp White wine vinegar
- 1 tsp Salt

Preparation of Sicilian-Style Chicken Skewers
For this recipe, you need the machine for making skewers if you want to make them precisely and quickly (a metal cube where you place the meat and then insert the wooden skewers).
Fill the metal cube up to two fingers from the edge with deboned and opened chicken thighs so they become like a slice, placing them to avoid gaps and holes, place the perforated lid on, and insert the wooden skewers.Once all the skewers are inserted, cut the meat by inserting the knife into each slot, and once finished, remove the lid and the skewers, which will be nicely cut.
Prepare the breadcrumbs in a bowl by mixing it with vinegar, a bit of olive oil, salt, parsley, and garlic, coat each skewer in the breadcrumbs and then place them on a baking tray lined with parchment paper.
Bake in the oven at 465°F for about 20-25 minutes, monitoring the cooking.
Obviously, you won’t cook 100 skewers all at once, so you can safely freeze the others, making sure to separate them with food-grade paper sheets.
