The coconut snowball cookies are a delicious variation I created for you. Over time, I tried versions with walnuts, hazelnuts, or almonds, all excellent, but I thought coconut and vanilla could give this buttery pastry a very aromatic and delicate note that is truly perfect, and I wasn’t wrong; they are really delicious.
Today, I start proposing the Christmas recipes; I know it seems early, but it takes time to choose the recipes to offer to friends and family for Christmas.
My coconut cookies are special; they contain no eggs and are ideal to pair with a cup of black tea. They are also perfect to gift at Christmas, as there are no eggs in the dough; you can store them in a tin box.

Ingredients
- 1 cup all-purpose flour
- 1/2 cup oz butter (soft)
- 3/4 cup oz grated coconut
- 1/2 cup powdered sugar
- Half vanilla bean
- 1 pinch salt
- 5/8 cup vanilla powdered sugar
Tools
- 1 Bowl
- 1 Electric whisk
- 1 Scale
- 1 Baking sheet
- Parchment paper
Procedure
Take the butter out of the fridge 20 minutes before using it and leave it at room temperature or soften it in the microwave.
Place the butter in the bowl with 1/2 cup of powdered sugar and beat it with the whisk until it is light and fluffy.
While continuing to beat the mixture, add the vanilla bean seeds, salt, and flour in three additions, then incorporate the grated coconut.The dough is ready; cover it with plastic wrap and place it in the refrigerator to firm up for 1 hour.
After resting, form 3/4 oz balls and place them on a parchment-lined baking sheet. With this amount, you’ll get 18 small cookies.
Put the baking sheet in the fridge until the oven is preheated.
Bake the pastries in a preheated static oven at 338°F for 13/15 minutes; they should remain light.
Remove the baking sheet from the oven and let the cookies cool for 7/8 minutes, then roll them in sifted powdered sugar; they will become slightly sticky, which is normal.
Transfer them to a rack and let them cool completely, then roll them in powdered sugar again.
The coconut snowball cookies are ready to enjoy.
