The super quick apple cake in 10 minutes is a very soft dessert, rich in fruit and simple to make. To prepare the apple cake, you will need a bowl and a hand whisk, and in a few minutes, you will make a soft, creamy batter ready to bake.
Last week, I made the forgetful apple cake, and today I thought of offering you a super quick cake made with ingredients that we usually all have at home: eggs, sugar, butter, and flour. I flavored the batter with lemon and vanilla, but you can substitute the flavors with your preference. Additionally, you can add a teaspoon of cinnamon to the batter to make it more aromatic and delicious. If you like butter in cakes, I recommend the paradise apple cake, a cloud of goodness.
To have a tall and even softer dessert, I used a 22 cm mold, but if you prefer, you can bake the super quick apple cake in a 24 cm mold, reducing the baking times.

Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 5 1/2 tbsp butter (melted and cooled)
- 1/3 cup milk
- 2 eggs (medium)
- 1 packet baking powder
- 1 tsp vanilla extract
- 1 tsp lemon zest (grated or other flavors as desired)
- 3 Golden Delicious apples (or medium Renette, about 1 lb, peeled and cored)
- 2 tsp butter
- 1 tbsp all-purpose flour
- 2 tsp vanilla powdered sugar
Tools
- 1 Bowl large
- 1 Hand whisk
- 1 Scale
- 1 Sieve
- 1 Cake pan springform, 9 inches in diameter
Method
Prepare the ingredients
Wash the lemon very well under running water, grate the zest, and set it aside.
Wash the apples, peel them, and chop one into small cubes, about 1/4 inch, and slice the other two into 1/4 inch slices, set aside (I put them in the fridge to prevent browning).
Melt the butter in a saucepan or in the microwave as I did; 30 seconds will suffice.
Butter and flour the 9-inch cake pan.
Prepare the batter
In a large bowl, mix the eggs with sugar using a hand whisk, add the melted and cooled butter, milk, vanilla, and lemon zest.
Add the sifted flour with the baking powder, mixing with the whisk to obtain a smooth batter. Add the chopped apple.
Transfer the mixture into the cake pan and arrange the apple slices on top of the batter.
Bake the cake in a preheated static oven at 350°F for about 45–50 minutes.
Do the toothpick test to check for doneness; if necessary, extend the baking time by a few minutes. Consider that each oven has a different power.If the cake’s surface tends to darken too much, cover it with a sheet of aluminum foil.
The super quick apple cake in 10 minutes is ready, let it cool before removing from the pan. Dust with powdered sugar and serve.

Storage
The super quick apple cake in 10 minutes can be stored in the fridge for 3–4 days; personally, I prefer to store fruit cakes in the fridge and leave them at room temperature for 30 minutes before serving.
If you want, you can store it at room temperature but not for more than 2 days because the fruit will start to sour and change flavor.
