I’m not a big fan of meat dishes, I admit, which might even be a disadvantage as a food blogger, and I often find myself searching for different ideas to make these dishes more enjoyable. This time, I came up with the idea to transform these piglet cutlets into an almost gourmet dish, with the addition of crushed pistachios. Lately, I alternate using the air fryer with the oven, especially for cooking main courses and vegetables, and I’m very intrigued by it, also to understand the various cooking times and to organize myself in the kitchen. - 4 slices pork (even better if piglet, chosen cut, cutlet)
- to taste breadcrumbs
- 2 pinches fine salt
- to taste pepper
- to taste garlic powder
- 5 tablespoons extra virgin olive oil
- 0.5 oz crushed pistachios

Steps
To make the Oven-Baked Piglet Cutlets with Pistachios, first dry the chosen piglet steaks well with paper towels.
In a dish, combine the breadcrumbs with the pepper, fine salt, and garlic.
Mix with a fork to blend these ingredients together.
In a deep dish, pour the extra virgin olive oil and dip the steak, moistening it on both sides.
Shake off the excess oil and place the meat into the previously prepared breadcrumbs.
In this case, also make sure the breadcrumbs adhere well on all sides by gently pressing the meat, and continue this operation until all the meats are completed.
Transfer the meat into a baking dish and pour the remaining breading oil into the plate.
Add the crushed pistachios, a little more oil, and bake in a preheated fan oven at 356°F for 30 minutes.
Piglet meat is very tender and does not require long cooking. You can accompany it with a very simple side dish like sautéed vegetables or steamed potatoes.
