Microwave Gratinated Zucchini with Turmeric

Microwave gratinated zucchini with turmeric, a delicious side dish that’s easy and quick to prepare thanks to microwave cooking.

Ingredients

  • 14 oz zucchini
  • 3 tbsps extra virgin olive oil
  • 1/2 cup breadcrumbs
  • 3/4 tsp fine salt
  • 1 oz cheese (grated)
  • to taste ground turmeric
  • 2 cloves garlic

Steps

  • To make Microwave Gratinated Zucchini with Turmeric, first wash the zucchini and trim the ends.

    Then cut them into sticks that are not too large, as in the photo.

    Pat them dry with a cloth to remove some of the excess water.

  • Pour the two tablespoons of water and 1 of oil at the bottom of the plate and mix quickly.

    Arrange the sticks avoiding overlapping them and do a pre-cooking for 5 minutes in the microwave at 800w for 5 minutes.

  • Meanwhile, in a bowl, mix the breadcrumbs with the salt, grated cheese, and ground turmeric.

  • Take the dish with the zucchini and distribute the breadcrumbs mixture evenly.

    Drizzle with the remaining two tablespoons of oil and put it back in the microwave, cooking for another 12 minutes at 800w.

  • Serve the dish hot.

    It’s perfect for accompanying all kinds of meats, including stews.
