EASY AND QUICK STUFFED DRIED TOMATOES

The stuffed dried tomatoes are a simple recipe, a tasty appetizer or a rich side dish, good on many occasions.

You will enjoy small bites that melt in your mouth, with a crunchy note given by the gratin.

INGREDIENTS FOR STUFFED DRIED TOMATOES

  • 10 dried tomatoes
  • 3.5 oz breadcrumbs (from bread)
  • 2 tbsps grated parmesan cheese
  • 2 anchovies in oil
  • 1 egg
  • 1 package tuna in oil (1 can)
  • to taste chopped parsley
  • to taste basil
  • to taste dried oregano

  • 1 Air fryer

PREPARATION OF STUFFED DRIED TOMATOES

For this recipe, you can use sun-dried tomatoes or the ones in oil as I did, which will speed up the preparation.

  • The night before (if using plain sun-dried tomatoes), soak the tomatoes in a bowl with water. In the morning, wash them and pat them dry slightly with paper towels. If you use tomatoes in oil, skip this step.

  • In a bowl, add an egg, black pepper, and then add the crumbled bread crumbs, parmesan cheese, drained tuna, chopped parsley and basil, chopped anchovies, and mix everything. If you like, also add some dried oregano.

  • Place half a tomato in the palm of your hand, fill it with the mixture, and place the other half of the dried tomato on top.

  • Place all the stuffed dried tomatoes in the air fryer basket and cook at 356° F for five minutes, turning them halfway through cooking.

  • Serve them hot or cold. They will be delicious both ways.
