POLVORONES INGREDIENTS
- 1 1/2 cups all-purpose flour
- 1/2 cup peeled almonds
- 6 tbsp lard
- 1 pinch salt
- 1/4 cup powdered sugar
- 1/2 tsp ground cinnamon
- 2 tsp anise liqueur

POLVORONES PREPARATION
Grind the almonds into flour and mix with the flour. Then, toast the flours to remove the moisture by placing them on a baking sheet lined with parchment paper and baking at 266°F for 35 minutes.
Let cool for at least 1 hour.
Place the flour in a mound on a cool work surface, add the powdered sugar, cinnamon, and salt.
Pour the softened butter and liqueur in the middle of the mound, then knead, compacting the dough to form a ball.
The dough will be very grainy and cracked, don’t worry, that’s its characteristic. Cover with plastic wrap and let rest for half an hour.
Roll out the dough with a rolling pin to a thickness of about 1/2 inch.
Cut the cookies with a 1 1/4 inch diameter round cutter and place them on a baking sheet lined with parchment paper.
Bake in a preheated oven at 320°F for 20 minutes.
Remove from oven and let cool the cookies. Once they are cool, dust with powdered sugar. Make sure not to touch the cookies when they are hot as they break easily. Wait for them to cool.
