Potato Meatloaf Cooked in Air Fryer

How good is potato meatloaf? Today I suggest a potato meatloaf cooked in the air fryer. Very simple to make, it requires very few ingredients and is always a crowd-pleaser.
This potato meatloaf, cooked in the air fryer, has a delicious golden crust on the outside and a very soft center. Come with me and let’s start making a mess.

Ingredients

  • 1 1/3 lb potatoes
  • 1/2 cup grated pecorino romano (about 2 oz)
  • 1/2 cup breadcrumbs (about 2 oz)
  • to taste parsley
  • 1 egg

Steps

  • After boiling and peeling the potatoes, place them in a bowl and mash them with a potato ricer or a fork.

    Add the grated cheese, the parsley, a pinch of salt, the egg, the breadcrumbs and mix well.

    Spread some breadcrumbs on a sheet of parchment paper and pour the mixture onto it, shape the meatloaf, brush with oil and then cover it with breadcrumbs.

    Cook in the air fryer at 356°F for 20 minutes.

  • Let the potato meatloaf cool for a few minutes, slice and enjoy with great satisfaction.
