Soft Citrus Cookies.
Simple, very soft, and delicate soft cookies with a citrus flavor. Very easy to make: in 20 minutes your home will smell wonderful and wholesome. They are ideal at any time of the day, a treat we all deserve because they are light and tasty. The soft citrus cookies will win you over with their simplicity: they are very quick and just too good! Ingredients for citrus cookies
- 2.5 cups all-purpose flour (I use spelt)
- 7 tbsp granulated sugar
- 1 egg
- 1.5 tsp baking powder
- zest of one orange
- zest of one lemon
- 2/3 cup water (Warm)
- 7 tbsp peanut oil (Or your preferred oil)
Steps for citrus cookies
In a bowl, mix the egg with the sugar, then add the oil and the water slowly. Add the grated citrus zest.
Start incorporating the previously sifted flour and baking powder into the liquids. Add them gradually, a little at a time. The mixture will be very creamy.
Line a baking tray with parchment paper and use two spoons to drop small heaps of the mixture onto the tray.
Bake at 350°F in a preheated static oven for 15 minutes.

Storage
These soft citrus cookies keep well for 3-4 days under a glass dome or in an airtight container.
The secret to keeping them so soft is not to leave them in the air, so their inside will remain moist and fragrant, and the citrus aroma will stay intense as on the first day.
