The apple strudel with puff pastry is a surprising dessert, a crispy puff pastry shell encloses an aromatic and delicious filling rich in apples, raisins, and pine nuts.
Perfect for breakfast, a snack, or even for an impromptu dinner with friends, it’s very quick to prepare and… it disappears in no time. Of course, it doesn’t pretend to replace the traditional recipe but it can be a great alternative when you’re short on time.
My recipe is very easy, I’ve been making it for twenty years and it’s always very well received. If you have time, you can prepare a light custard or a chantilly cream to serve as an accompaniment.
The strudel is a typical dessert of Northern Italy and Austria, and each region has its own recipe. The filling is almost always the same, but the outer dough can be made with shortcrust pastry, strudel dough or puff pastry. Ingredients
- 1 roll puff pastry (rectangular)
- 3 Renette apples (or Golden, about 21 oz net weight)
- 2 tbsp butter (melted)
- 1/4 cup brown sugar (or granulated sugar)
- 1/2 cup raisins
- 1/3 cup pine nuts
- 2 tsp lemon juice
- 1 tsp ground cinnamon
- 1 tsp lemon zest (grated)
- to taste vanilla powdered sugar

- 1 Cutting board
- 1 Scale
- 1 Baking tray
- 1 Potato peeler
Method
Wash the raisins and dry them; for this type of preparation, I don’t soak them because they would absorb water. I include them in the fillings dehydrated, and during baking, they will absorb all the fruit juices, becoming soft and flavorful (of course, they shouldn’t be too dry; try to buy soft raisins, preferably Italian).
Melt the butter in the microwave and set aside.
Wash the apples, peel them, and cut them into cubes. Place them in a bowl with the lemon juice, sugar, cinnamon, and mix. Add the raisins, pine nuts, and lemon zest.
Unroll the puff pastry and brush it with melted butter.
Spread the filling in the center of the puff pastry (on the longer side) and fold the edges over each other.
Bake the dessert in a preheated oven at 340°F for about 40/45 minutes (adjust according to your oven) or until golden brown.
Remove the baking tray from the oven and let the strudel cool before transferring it to the serving plate.
The apple strudel with puff pastry is ready. Dust with powdered sugar and serve.
Tips
Storage
The apple strudel can be stored at room temperature for a couple of days. If you need to store it longer, place it in the fridge and warm it in the oven at 212°F before serving.
