Pumpkin is so delicious, I love it in all forms, but how do you make air fryer roasted pumpkin? It’s really very simple, and you can enjoy it as is or use it for other dishes like soups or patties.
Just season it with a little olive oil and spices for a delicious and satisfying vegan side dish that’s very light, only 1 Weight Watchers point, or add other ingredients for a heartier and flavorful dish.
I used my air fryer, which is quite powerful, this one: Philips Airfryer XXL. For other air fryers, the preparation is identical, but it might take a few more minutes.

Ingredients
- 1 slice pumpkin (a large slice to make at least 14 slices.)
- 2 tsps extra virgin olive oil (2 measuring teaspoons)
- 1 tsp thyme (dried)
- 1 tsp rosemary (dried)
- 1 bunch parsley
- to taste salt
- Points per serving = 1 WW point

Steps
Wash the pumpkin well and cut it into thin slices, trying to make at least 14 or 16 so you have 7 or 8 per serving. Do not remove the skin! It’s delicious and full of nutrients. If you really want to remove it, do it after cooking, as it will certainly be easier.
Add all the spices to the pumpkin slices and mix well.
Place the pumpkin slices in the air fryer basket and cook at 356°F-392°F (180°C-200°C) for about ten minutes. Then open, check the cooking, shake the basket a bit and cook for another 5 minutes. I don’t know what model of air fryer you have, but if it’s not very powerful, it might take longer: adjust by inserting a fork into the pumpkin. It should be soft inside and well golden on the outside.
At this point, the air fryer roasted pumpkin is ready. Let it cool a little, then season it with a bit of salt, the 2 teaspoons of oil, and fresh chopped parsley.
You can serve it warm or even cold. Sometimes I cook it in advance, store it in the fridge for up to 3 days, and then season it when ready to serve.
