Ischian Zingara

The Ischian Zingara sandwich is a typical specialty of the island of Ischia, created in 1977 at the “La Virgola” establishment in Ischia Ponte.

Created by Nello Massa and Massimo Acunto, in the summer of 1977, during the tourist boom, the sandwich became a symbol of Ischian cuisine.

It is appreciated for its simplicity and authentic taste, representing an icon of Ischian gastronomy: sweet cured ham, fiordilatte, tomato, iceberg lettuce, and mayonnaise, all enclosed between two slices of rustic bread.

Ingredients

  • 2 slices rustic bread
  • to taste cured ham (preferably from Carpegna or Parma)
  • 1 Fiordilatte of Agerola
  • 1 salad tomato
  • to taste mayonnaise
  • to taste iceberg lettuce

Steps

  • Spread a thin layer of mayonnaise on both slices of bread.
    Place the cured ham, lettuce, sliced fiordilatte, and tomato.
    Close the sandwich and press it lightly.
    Grill the sandwich on a hot grill, turning it to achieve even browning.
    Serve hot, cut in half.
