  • 1.1 lb pork tenderloin
  • 1/2 cup orange juice
  • 1 tsp orange zest (grated)
  • 1 1/3 tbsp extra virgin olive oil
  • 1 1/2 tbsp butter
  • 1/4 cup flour
  • 1/3 tsp fine salt
  • A few leaves mint

Steps

  • From the pork tenderloin cut slices just over 1 cm thick (about 3/8 inch), coat them in flour on both sides and brown them in a nonstick pan with butter and oil.

  • As soon as they have color, pour the orange juice over them, season with salt and add the grated orange zest. Cook over low heat with a lid for 10 – 15 minutes, then once the pan sauce has reduced turn off the heat and finish with a few mint leaves.
