Ingredients
- 1.6 cups all-purpose flour
- 4.4 oz butter
- 4 tbsps unsweetened cocoa powder
- 0.5 cups sugar
- 2 eggs
- 1 pinch salt
- 8.8 oz raspberry jam

Steps
Weigh all the ingredients and place them in front of your work surface so you don’t forget anything.
Mix the cocoa in a bowl with one yolk, one whole egg, and the sugar until you get a smooth cream.
Mix the flour with the softened butter, rubbing the two ingredients between your fingertips.
Add the previously obtained cocoa cream to the previous dough. Also, add a pinch of salt.
Mix everything with a fork and then knead it very quickly. Just enough to combine the ingredients without “burning” the dough.
Make a ball with the cocoa shortcrust pastry you’ve obtained. Place it on a piece of parchment paper and flatten it slightly. Now, the dough must rest in the fridge for at least half an hour.
After resting, divide the dough into two parts, one about twice the size of the other. Use the larger part to prepare the base of your raspberry tart, using parchment paper, so it will be easier to place it in the pan.
Now transfer it to the pan and form a rim all around with the remaining dough. Pour the jam and evenly spread it over the surface.
With the leftover pastry, create strips or decorations as desired.
Bake the cocoa tart with jam in an air fryer for 25 minutes at 320°F in Bake function, directly on the bottom without using the rack. If you use a home oven, bake it at 356°F. It will take about half an hour.
My Advice
The shortcrust pastry keeps very well in the fridge for a few days, wrapped in food-grade plastic wrap.
The tart can be kept for a few days at room temperature in a closed container.

What other jams can I use?
As I mentioned in the introduction, all jams are fine; it depends on what you like best. I recommend raspberry, mixed berries, or even a good orange marmalade.
