Have you seen what a wonderful tart? Did you know that you can also use your electric air fryer like a small oven and bake it while consuming less energy than a traditional oven? You just need to slightly reduce the dough quantities because large pans won’t fit in our magical fry-fry, but don’t worry, a pan of the right size and you’re done. I really like cocoa tart with jams that are not too sweet, raspberry or mixed berries are perfect. If your favorite jam has another flavor, though, no problem. Try cooking what you then enjoy eating. The secret to a successful dish all lies there.

Ingredients

  • 1.6 cups all-purpose flour
  • 4.4 oz butter
  • 4 tbsp unsweetened cocoa powder
  • 0.5 cups sugar
  • 2 eggs
  • 1 pinch salt
  • 8.8 oz raspberry jam

Steps

  • Weigh all ingredients and prepare them in front of your workspace to avoid forgetting anything.

  • Mix the cocoa in a bowl with one yolk, one whole egg, and the sugar until you obtain a smooth cream.

  • Mix the flour with the soft butter using your fingertips to rub the two ingredients together.

  • Combine the previous dough with the cream made earlier with the cocoa. Add a pinch of salt as well.

  • Mix everything with a fork and then knead very quickly. Just enough to combine the ingredients without ‘burning’ the dough.

  • Form a ball with the cocoa shortcrust you have made. Place it on a piece of parchment paper and flatten it slightly. Now the shortcrust needs to rest in the refrigerator for at least half an hour.

  • After resting, divide the dough into two parts, one approximately double the size of the other. With the larger part, prepare the base of your raspberry tart, using the parchment paper so it will be easier to place in the pan later.

  • Transfer it to the pan and form a border all around with the remaining dough. Pour the jam and spread it evenly over the surface.

  • With the leftover shortcrust, create strips or decorations as desired.

  • Bake the cocoa tart with jam in an air fryer for 25 minutes at 320°F (160°C) on Bake mode, directly on the bottom without using the grid. If you use a home oven, bake it at 350°F (180°C). It will take about half an hour.

My Advice

The shortcrust pastry can be stored very well in the refrigerator for a few days, wrapped in food-safe plastic wrap.

The tart can be stored for a few days at room temperature in a closed container.

    As I mentioned in the introduction, all jams are fine; it depends on what you like best. I recommend raspberry, mixed berries, or even a good orange jam.
