Have you seen this beautiful tart? Did you know you can also use your electric air fryer like a small oven and bake it using less energy than a conventional oven? You will only need to slightly reduce the shortcrust pastry quantities because large pans do not fit in our magical fryer, but don’t worry: a pan of the right size and you’re done. I really like cocoa tart with jams that aren’t too sweet; raspberry or mixed berry jams work wonderfully. If your favorite jam has another flavor, there’s absolutely no problem. Try to cook what you then enjoy eating. The secret to a good result is exactly that.

Ingredients

  • 1 2/3 cups Type 00 wheat flour (or all-purpose flour)
  • 9 tbsp butter (unsalted)
  • 6 tbsp unsweetened cocoa powder
  • 1/2 cup sugar
  • 2 eggs
  • 1 pinch salt
  • 9 oz raspberry jam

Steps

  • Weigh all the ingredients and place them on the work surface so you don’t forget anything.

  • Mix the cocoa in a bowl with one yolk, one whole egg and the sugar until you obtain a smooth cream.

  • Mix the flour with the softened butter; using your fingertips, rub the two ingredients together.

  • To the previous mixture add the cocoa cream prepared earlier. Also add a pinch of salt.

  • Mix everything with a fork and then knead very quickly. Just the minimum needed to combine the ingredients without “warming” the dough.

  • Form a ball with the cocoa shortcrust pastry you obtained. Place it on a piece of parchment paper and flatten it slightly. Now the pastry must rest for at least half an hour in the refrigerator.

  • After resting, divide the dough into two parts, one roughly twice the size of the other. With the larger portion prepare the base of your raspberry tart using the parchment paper, so it will be easier to transfer it to the pan.

  • Now transfer it into the pan and form a rim all around with the remaining dough. Pour in the jam and spread it evenly over the surface.

  • With the leftover shortcrust pastry create strips or decorations as you like.

  • Bake the cocoa tart with jam in the air fryer for 25 minutes at 320°F on the Bake function, directly on the bottom without using the rack. If instead you use a conventional oven, bake it at 356°F. It will take about half an hour.

Recommendations

The shortcrust pastry keeps very well in the refrigerator for a few days if wrapped in food-safe plastic wrap.

The tart keeps for a few days at room temperature in a closed container.

  • What other jams can I use?

    As I mentioned in the introduction, all jams work — it depends on what you like most. I recommend raspberry, mixed berries or even a good orange marmalade.
