PUMPKIN AND CHOCOLATE PLUMCAKE

  • 14 oz pumpkin
  • 2 eggs
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 tsp baking powder
  • 1 3/4 cups all-purpose flour
  • 1/2 cup vegetable oil
  • to taste ground cinnamon
  • to taste chocolate chips

  • To prepare this delicious pumpkin and chocolate plumcake, first clean the pumpkin by removing the peel, seeds, and inner strings. Cut it into small pieces. Place them on a baking sheet and bake in a well-preheated static oven at 350°F for about 15-20 minutes or until they become very tender.
    Let them cool well. Blend them with cinnamon and oil until you get a smooth, homogeneous puree.

    In a bowl, mix the granulated sugar and brown sugar with the eggs.

    Add the pumpkin puree and mix well.

    Then add the previously sifted baking powder and flour, and stir with a spatula until you get a homogeneous batter.

    Finally, add the chocolate chips. Mix briefly and transfer the batter into a loaf pan lined with parchment paper. Level it and sprinkle additional chocolate chips over the surface.
    Bake in a preheated static oven at 350°F for about 40 minutes, checking the degree of baking with a toothpick that should come out dry.

    Remove from the oven and let cool on a wire rack before slicing and enjoying.
