SOFT SUMMER CAKE

  • 1.5 cups all-purpose flour
  • 6 tbsps cornstarch
  • 1/3 cup milk
  • 1/3 cup sunflower oil
  • 2/3 cup sugar
  • 2 eggs
  • 1 pinch salt
  • 1 packet baking powder
  • as needed pineapple
  • as needed nectarine
  • as needed mango
  • as needed sugar sprinkles

  • To prepare the soft summer cake, first carefully wash the fruit, dry it, and cut it into pieces or slices in the case of the nectarine.

    Using electric beaters, beat the eggs with the sugar and a pinch of salt until they become white and frothy.

    Gradually add the oil, sifted cornstarch, flour, and baking powder, then incorporate the milk at room temperature and mix everything with a hand whisk or spatula until smooth and lump-free.

    Butter and flour a 9.5-inch round pan and transfer the batter into it.

    Arrange the previously cut fruit on the surface of the cake and sprinkle with sugar sprinkles.

    Transfer the pan to a preheated oven at 356°F for about 35 minutes.

    Always check the cake’s doneness with a toothpick, as the time may vary depending on your oven.

    Remove the cake from the oven, let it cool, and then place it on a plate or tray.
