CHEESY ZUCCHINI PATTIES

Cheesy zucchini patties with a crispy outside and soft inside are easy to prepare and ideal for any occasion.

Great to enjoy hot, but also delicious cold, they perfectly accompany a fresh salad or a light sauce. Try them for a light and tasty meal!

Ingredients

  • 1 1/3 cups zucchini
  • 2/3 cup ricotta
  • 2 eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs (Plus extra for coating)
  • 3 1/2 oz cheese (Like Galbanino or scamorza)
  • as needed extra virgin olive oil
  • as needed salt

  • For these cheesy zucchini patties, first, wash the zucchinis, cut off both ends and shred them into a bowl using a box grater with large holes.

    Add the ricotta, eggs, grated Parmesan, breadcrumbs, and salt.

    Mix everything with a fork until you get a homogeneous mixture.

    Take a bit of the mixture with a spoon, spread it on your hand, place some pieces of your chosen cheese in the center, add a bit more zucchini mixture on top and seal the edges well.

    Coat each patty with plenty of breadcrumbs.

    Cook in a pan for about 10 minutes on each side or in an air fryer or in the oven at 400°F for 15 minutes.
