Ingredients
- 1 1/3 cups zucchini
- 2/3 cup ricotta
- 2 eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs (Plus extra for coating)
- 3 1/2 oz cheese (Like Galbanino or scamorza)
- as needed extra virgin olive oil
- as needed salt
CHEESY ZUCCHINI PATTIES
For these cheesy zucchini patties, first, wash the zucchinis, cut off both ends and shred them into a bowl using a box grater with large holes.
Add the ricotta, eggs, grated Parmesan, breadcrumbs, and salt.
Mix everything with a fork until you get a homogeneous mixture.
Take a bit of the mixture with a spoon, spread it on your hand, place some pieces of your chosen cheese in the center, add a bit more zucchini mixture on top and seal the edges well.
Coat each patty with plenty of breadcrumbs.
Cook in a pan for about 10 minutes on each side or in an air fryer or in the oven at 400°F for 15 minutes.
