SEA BREAM FILLET WITH BLUEBERRIES AND LIME
- 1.1 lbs fresh sea bream, fillets
- 1 orange
- 2 lime
- 1 clove garlic
- to taste extra virgin olive oil
- to taste butter
- to taste salt
- 1 shallot
- 3.5 fl oz red wine
- 1 tablespoon sugar
- 10.6 oz blueberries
Steps
To prepare this tasty dish, first focus on cleaning the fish to obtain the fillets or simplify things by having them cleaned and prepared by the fishmonger. Make sure to leave the skin on.
Focus on preparing the sauce.
Sauté the chopped shallot with a knob of butter. Add the 10.6 oz of blueberries, the tablespoon of sugar, the red wine, adjust the salt, and let it cook for about 15 minutes. Now you can either strain the sauce to remove peels and seeds for a more liquid sauce, or as I did, transfer everything to a container and blend with an immersion blender for a thicker sauce 😋.
Set the sauce aside and move on to cooking the fish.
In a non-stick pan, sauté a garlic clove with a drizzle of extra virgin olive oil, add the sea bream fillets with the skin side down on the pan. Sauté until the sea bream skin is crispy. Add a bit of salt, the juice and slices of orange, and the juice and zest of the lime. Cover and cook for 5-6 minutes.
