In my case, I prepared them in bianco, but if desired, baby octopus with peas can also be made with sauce and, in addition to being a light main dish, it can also be used as a pasta dressing, avoiding letting it dry out too much.

- 1.75 lbs baby octopus
- 2.2 cups petite peas (Fine)
- 2 cloves garlic
- to taste chili pepper
- 0.85 cups dry white wine
- to taste extra virgin olive oil
- to taste salt
- to taste chopped parsley

To prepare this very simple dish, first, we need to clean and thoroughly wash the baby octopus. After washing them, dry them well by patting them with paper towels. Pour the oil into a large pan, add the chili pepper, parsley stalks, and garlic.
Remove the garlic, add the baby octopus, and sauté over high heat for a few minutes.
Add the dry white wine and let it evaporate.
Once evaporated, add the peas, two ladles of water, add salt, and let it cook on low heat for 20/30 minutes with the lid on.
Stir occasionally, and if necessary, add a little more water.
During the last 10 minutes, let the cooking juices reduce.
Once cooked, add the chopped parsley and serve immediately.
