Pea gnocchi, a complete, healthy and nutritious dish. They are usually made with flour and potatoes, but this time I present them to you in this special version with peas and without eggs. In this way, they will also be a good protein source thanks to the legumes in the dough. Not to mention the beautiful bright green color, which will make you stand out!

PEA GNOCCHI
- 10.5 oz frozen peas
- 1.75 cups all-purpose flour
- to taste salt
- to taste extra virgin olive oil
- to taste grated Parmesan cheese
Steps
To make egg-free pea gnocchi, you will first need to cook the peas.
Sauté the peas in a pan with a drizzle of oil for about 10 minutes or plunge them into boiling water for a few minutes.
Once cooked, blend with an immersion blender until you obtain a green and as smooth as possible purée.
At this point, once cooled, put it in a bowl, add a bit of salt and the flour.
The amount of flour is approximate and depends on the type of flour you use and if it binds quickly or not.
Knead until you get a soft dough. If it is a bit sticky, add a little more flour but do not exceed 2 cups otherwise they will become hard.
Form the classic rolls and cut them into chunks, or moisten your hands and form round balls one by one.
Plunge the gnocchi into boiling water and when they float to the surface they are ready to be drained and seasoned as you prefer.
You can dress them in a more traditional way with butter and sage, or with a good ragù, with a simple tomato sauce, or as in my case, simply with a drizzle of extra virgin olive oil and grated Parmesan cheese 😋
