COD FILLETS WITH PLUMS

  • 14 oz cod fillets
  • 6 plums
  • 1 cup white wine
  • 1 clove garlic
  • 1 shallot
  • 2 potatoes
  • to taste parsley
  • to taste extra virgin olive oil
  • to taste salt

  • To prepare the cod fillets with plums, first slice the shallot into thin rounds and sauté it in olive oil in a pan. When it turns golden, let it cool slightly and add a whole clove of garlic and the cod fillets.

    Immediately add the white wine, season with salt and sprinkle with parsley.

    Let cook for 5 minutes on medium heat (check that it hasn’t dried out, if so, add more white wine).

    Peel the potatoes, slice them into thin (but not too thin) slices, and add them to the pan between the cod fillets (do not place them on top of the fillets, otherwise they will remain a bit hard at the end of cooking).

    Toast the hazelnuts in a pan without oil, chop them and set them aside.

    Remove the pits from the plums and slice them. Add them to the pan with the chopped hazelnuts.

    Cook on low heat.

    Check the doneness of the potatoes and turn off the heat only when they are cooked (consider about ten minutes).

    A few minutes before turning off the heat, add another drizzle of olive oil.
