MIXED COOKIES

  • 2 cups all-purpose flour
  • 3/4 cup potato starch
  • 7 oz butter
  • 1/2 cup sugar
  • 1 egg
  • lemon zest (Optional)
  • 1 pinch salt
  • to taste jam (Flavor of your choice)
  • to taste dark chocolate
  • to taste white chocolate
  • to taste granulated sugar
  • to taste powdered sugar

Steps

  • To start our mixed cookies, knead butter, sugar and a pinch of salt in a bowl.

    Add the egg and mix until it is absorbed into the dough.

    Finally, add 1 3/4 cups of flour and the potato starch and knead until you get a classic shortcrust texture.

    Divide the dough into two equal parts, incorporate cocoa into one part while adding the remaining 1/4 cup of flour to the other.

    Form two dough balls, wrap them in plastic wrap and let them rest in the fridge for about 2 hours until the dough hardens.

    After resting, quickly reshape the dough, roll it out with a rolling pin and create all the shapes you want using your imagination.

    Place the cookies on a baking sheet lined with parchment paper and bake in a static oven at 350°F/360°F for about 10-12 minutes.

    Remove from the oven and let cool.

    Once cooled, you can glaze them with melted chocolate.
