  • Preparing this tray of potatoes, pumpkin, and sausage is very simple, the only thing that might be a bit more complicated is peeling the pumpkin, but the rest is very easy.

    First, peel the potatoes, cut them into chunks, and place them in a bowl with cold water.

    Then, with a knife, peel the pumpkin, cut it into chunks, and transfer it to a large bowl. Drain the potatoes and add them to the bowl with the pumpkin.

    Add a drizzle of oil, salt, pepper, and the needles of a sprig of rosemary. Mix well, then transfer to a baking tray lined with parchment paper. Use a tray that allows you to spread everything in a single layer. Add the sausages and bake in a preheated oven at 400°F for about 40 minutes or until the pumpkin is soft.

    Of course, you can use the type of pumpkin you like best and add any herbs you want, or a sliced onion if you prefer.

    To make it even more indulgent, before serving, you can add provola cheese, then put it back in the oven to melt it.
