Ingredients
- 1.1 lbs egg lasagna sheets
- 7 oz fresh bacon
- 1 cup white wine
- 2 yellow bell peppers
- 2 red bell peppers
- 9 oz mozzarella
- to taste extra virgin olive oil
- 1/2 onion
- to taste salt and pepper
- 3.5 tbsp butter
- 3.5 tbsp all-purpose flour
- 2 cups milk
- to taste salt

Steps
First, cut the peppers in half, remove the seeds, the white filaments, wash them, and cut them into strips.
Cut the bacon into strips and brown it in a pan.
In another pan add a drizzle of oil and sauté the onion. Then add the peppers and cook them. When they have softened a bit, add the wine and continue cooking until it has evaporated. Season with salt and pepper.
Prepare the béchamel starting with the base, the roux, by melting the butter in a saucepan and adding the flour, stirring to prevent sticking or lumps. Remove the saucepan from the heat, add the warm milk a little at a time, then put it back on the heat and continue cooking until it thickens, adjusting the seasoning with salt and adding nutmeg.
Butter the baking dish and cover the bottom with an even layer of béchamel.
Layer the lasagna sheets, add some béchamel, some bacon, peppers, and mozzarella, overlap more pasta sheets and continue this way until all ingredients are used.
Finish the lasagna with a generous layer of peppers, bacon, mozzarella, and béchamel.
Bake in a preheated oven at 356°F for about 25-30 minutes.
