Spinach gnocchi, super quick and super tasty, are ready in a flash with just two ingredients: spinach and flour.

- 10.5 oz baby spinach (Or fresh spinach)
- 1.5 cups flour
- 3.5 tbsps butter
- to taste salt
- to taste parmesan
- to taste sage
Steps
You’ll see that making these spinach gnocchi is very simple.
Take the baby spinach or spinach, clean them, wash them, and dry them.
Put the spinach leaves in the blender and blend until you get a homogeneous mix, add a couple of tablespoons of flour to make it easier to mix everything.
Transfer the mixture to a bowl or work surface.
Add enough flour to obtain a workable dough.
Form logs, and with a knife cut into small pieces.
Cook in salted boiling water to which you have added a drizzle of oil.In a fairly large pan, melt the butter with a drizzle of oil, as soon as it starts to sizzle, add the sage and let it brown for a few minutes. As soon as the leaves start to become almost crispy, turn off the heat and set aside.
As soon as the gnocchi rise to the surface, drain them and place them directly in the pan with the seasoning.
When serving, add a generous sprinkle of Parmigiano Reggiano.
