- 14 oz canned chickpeas
- 5 zucchini
- 1/3 cup grated Grana Padano cheese
- to taste spices
- to taste salt
- to taste breadcrumbs
Steps
Let’s prepare these delicious zucchini and chickpea croquettes together. In a bowl, grate the zucchini, add the chickpeas, some breadcrumbs, salt, and mix with a fork.
Blend until smooth, add a bit of water if needed.
If you want to add spices, add some more breadcrumbs and mix well.
Shape the croquettes with the mixture obtained, roll each croquette in breadcrumbs. Spray them with oil and cook in an air fryer at 356°F for 25 minutes until hot and crispy. Alternatively, you can fry them in vegetable oil or bake them in the oven.
