STRAWBERRY COOKIES

  • 2 cups all-purpose flour
  • 1/2 cup grated coconut
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup vegetable oil
  • Juice and zest of one lemon
  • 1/2 packet baking powder
  • 1 cup strawberries (Chopped)

  • In a bowl, mix the egg with sugar, oil, lemon juice, and grated lemon zest using a spatula. Gradually add the sifted flour with baking powder and grated coconut, and mix. The dough will be like a soft and sticky shortbread (do not add any liquid, the dough should be like this).

    Quickly wash the strawberries, dry them very well. Remove the stem and cut them into pieces.

    Incorporate into the dough and mix.

    Using two spoons, make small mounds of dough and place them on a baking tray lined with parchment paper, spaced slightly apart.

    Bake in a preheated oven at 350°F using the convection setting for about 20/25 minutes.

*These cookies can obviously be made much smaller, but I prefer them large and a bit plump because they stay softer and more delicious
