SAVORY MARITOZZI
- 4 3/4 cups Manitoba flour
- 1 1/4 cups milk
- 1 egg
- 3/4 cup butter
- 2 tsp salt
- 1 tsp sugar
- 1/2 packet dry yeast
- to taste Mayonnaise
- to taste tuna
- to taste lettuce
- to taste black olives
SAVORY MARITOZZI
We can knead either by hand or with a stand mixer, I will write how to make the dough by hand.
Put the milk, salt, sugar, egg, and melted but cool butter in a large bowl, add the flour and start mixing, add the yeast and with the help of a spoon or spatula incorporate all the ingredients well.
Turn the mixture out onto a lightly floured work surface and start kneading with your hands until you get a nice smooth dough.
Place in a bowl covered with plastic wrap to rise for 3/4 hours until doubled. The rising time can vary depending on the temperature in your home, the colder it is, the longer it will take, and vice versa, the warmer it is, the less time it will take to rise until doubled.
Once the necessary time has passed and it has doubled in volume, place it on the floured work surface, divide the dough into many pieces, and shape our maritozzi, pirling them and leaving the closure underneath.
Let rise for about an hour covered with a cloth in a warm place away from drafts (it would be fine in the oven off with the light on).
Once risen, brush them with an egg yolk stretched with a little milk and bake in a preheated oven at 350°F for about 10/15 minutes.
Keep an eye on them based on browning, again baking may vary from oven to oven.Let them cool on a rack so that steam does not form in contact with a surface.
Make a cut lengthwise without opening them completely and fill according to our tastes.In my case, I spread a layer of mayonnaise and filled them with lettuce, tuna, and black olives.
