OLIVE FOCACCIA
- 4 3/4 cups all-purpose flour
- 1 1/2 cups water
- 1 teaspoon honey
- 10 g salt
- 2 tablespoons potato flakes
- 6 tablespoons extra virgin olive oil
- 150 g olives (Green – black)
- to taste pepper
- to taste salt
Steps
To make this very inviting focaccia, we first need to create a sort of starter…In a bowl, mix the honey, yeast, and half a glass of water (taken from the total) and let it rest for about 20 minutes until foam forms on the surface.
In the bowl of the stand mixer, pour the flour, oil, and potato flakes, then pour in the glass with the yeast and almost all of the remaining water (add the water a little at a time because depending on the flour, you might need more or less).
Knead for a couple of minutes and then add the salt last.
Turn off the mixer when you have obtained a smooth and elastic dough, which will detach from the walls of the mixer and gather around the hook (this will take some time, as the dough hydration is quite high).
Once the dough is elastic, place it in a closed container with the lid or plastic wrap and let it double, which will take about 4/5 hours, but it also depends on the room temperature; the warmer it is, the quicker it will rise, the cooler it is, the longer it will need to rise.
After the resting time, take the dough and spread it out, stretching it with your fingertips on a previously oiled and dusted 16×12 inches pan with durum wheat semolina.
Season with olive oil, pitted olives, and salt.
Bake for 30 minutes at 356°F in a preheated oven. Remove the olive focaccia from the oven and let it cool on a wire rack.
