Stuffed focaccia, spectacular…soft inside and very crunchy outside. Very easy to prepare, without getting your hands dirty, everything is mixed in a bowl with a spoon or a wooden ladle.

Great to eat plain or baked and stuffed, or in my case, stuffed before baking it 😋

STUFFED FOCACCIA

  • 4 cups all-purpose flour
  • 1.75 cups water
  • 1 tsp sugar
  • 0.18 oz fresh yeast
  • 0.53 oz salt
  • 7 oz cooked ham (Or any other deli meat)
  • 5.3 oz provola cheese (Or any other cheese)
  • to taste extra virgin olive oil
  • to taste salt

Steps

  • In a bowl, place the flour, dissolve the yeast in water and sugar and pour half of it into the flour, mixing with a spoon or a wooden ladle, add the oil and the remaining water continuing to mix and let it absorb, if necessary, help yourself with your hands. Finally, always mixing, add the yeast. Once you have the dough, which will be a bit sticky, grease the surface with oil. Cover the bowl with plastic wrap and wait about 20 minutes.

    After this resting time, take the bowl and still with the ladle, lift the dough and fold it over itself. Doing so will strengthen it even more.

    Cover the bowl with plastic wrap and let rise for about 2 hours.

    After the resting time, pour a little oil on the dough and a little on your hands. Repeat the operation you did before with the ladle but this time with your hands very gently. It will become smooth, elastic, and airy dough.

    Oil the work surface and pour the dough on it, it is sticky but that’s how it should be, DO NOT ADD flour. To handle the dough, help yourself with oil on your hands. Divide the dough in half, set one half aside and place the other half on a well-oiled baking sheet.

    Spread with your fingertips and stretch well, you will notice a very elastic and tight dough.

    Add the cooked ham and cheese on top.

    Cover with the remaining half of the dough. It is so soft you will be able to spread it easily.

    You need to match the top layer of dough with the bottom layer. If it sticks, grease your hands.

    Cover the baking sheet with a cloth and let rise for about 40 minutes.

    After the resting time, bake in a preheated oven at 428°F for about 15/20 minutes. Then move the baking sheet to the highest part of the oven and bake for another 5/10 minutes so that a very crunchy crust forms on top.

    Remove from oven and… TASTE 😋
