LEMON AND ALMOND BISCUITS

A simple and light shortcrust pastry without butter, with an intense citrus flavor and the unmistakable taste of almond, encases a fragrant lemon cream 😋. Very easy and quick to prepare, they are a real treat, you can’t stop at one. Perfect to accompany a good tea or as a sweet treat at the end of a meal.

LEMON AND ALMOND BISCUITS

  • 5.3 oz almond flour
  • 1.6 cups all-purpose flour
  • 3/4 cup sugar
  • 2 eggs
  • 1 lemon (Zest and juice)
  • 1 egg yolk
  • 1 tbsp sugar
  • 1 tbsp potato starch
  • 1 glass milk
  • lemon juice (1 lemon)
  • 1 1/4 cups powdered sugar
  • to taste lemon juice
  • 2 drops food coloring (Yellow)

Steps

  • In a bowl, break the eggs, add the sugar and mix with a hand whisk for a few minutes.

    Add the grated lemon zest, the juice, and mix well.

    Combine the almond flour and mix to combine.

    Finally, add the flour and mix with a spoon to create a mass.

    Roll out the dough between two sheets of baking paper, use a cookie cutter to create many small circles and place them on a baking sheet lined with baking paper.

    Bake in a preheated fan-assisted oven at 356°F for 10-12 minutes, or in a static oven at 374°F for the same time.

    After the cooking time, take them out and let them cool. Meanwhile, prepare the lemon cream and glaze.

    LEMON CREAM

    Put the milk in a saucepan and heat it up, but don’t let it boil.

    In a bowl, put the egg yolk with the sugar and mix with a hand whisk, add the potato starch and gradually add the milk, mixing well to avoid lumps.

    Put it on the stove, add the lemon zest, and let the cream cook, stirring continuously with a wooden spoon to prevent it from sticking to the bottom of the saucepan. Once cooked, place it in a bowl, covering with cling film in contact.

    LEMON GLAZE

    In a small bowl, mix the powdered sugar with the lemon juice and the coloring, mixing until you get the right consistency, which should be like toothpaste. If needed, add more powdered sugar or lemon juice.

    Glaze half of the obtained cookies and add almond granules. Let them dry a bit.

    ASSEMBLY OF THE BISCUITS

    Take a non-glazed biscuit, add a teaspoon of lemon cream in the center, and close with a glazed biscuit and almond granules.
