- 1.1 lbs baby octopus
- 10.5 oz potatoes
- 1 clove garlic
- 1 bunch parsley
- 3.4 fl oz white wine

Steps
To prepare these delicious baby octopus and potatoes, start by cleaning the seafood and potatoes.
Bring the potatoes to a boil in a pot with water.
In the meantime, clean the baby octopus, wash them well under running water, and pat them dry with paper towels. For convenience, you can have your fishmonger clean them for you.
Heat a little oil and a clove of garlic in a pan. Add the baby octopus, let them brown for a minute, deglaze with the wine, and add a pinch of salt.
Lower the heat, cover with a lid, and cook for 15-20 minutes, or until they are tender when pierced.Meanwhile, the potatoes will be cooked, drain them, cool them under running water, and peel them.
Cut them into fairly large pieces, place them in a bowl, and season with salt, pepper, extra virgin olive oil, and parsley.
Now add the baby octopus, draining them slightly from the excess liquid.
Mix well with a spoon.
