Fusilli with ricotta cream and radicchio with speck, a simple and quick recipe to make. For this idea, I chose to use durum wheat fusilli found in the fresh section of the supermarket, which have very short cooking times. That’s why in the end, the recipe is very simple and quick to make. Radicchio, in fact, cooks very quickly and combines with ricotta to create a delicious cream. The speck should be sautéed separately for two or three minutes until crispy, and the pasta I chose cooks in 6 minutes. Radicchio is one of my favorite ingredients. Ingredients

  • 11 oz fusilli (durum wheat)
  • 1 cup cow ricotta
  • 10.5 oz radicchio (net of waste)
  • 3 tbsps extra virgin olive oil
  • 1 slice red onion
  • 3.5 oz speck, diced
  • 0.5 oz coarse salt (for the pasta)

Steps

  • To make Fusilli with Ricotta Cream and Radicchio with Speck, first cut the radicchio into rather wide strips, wash and drain well. In a large pan, heat the oil and sauté the chopped onion for a couple of minutes over low heat. Add the radicchio, a pinch of salt, a ladle of water, and stew for 10 minutes, continuing to cook over low heat, stirring occasionally.

  • Combine the radicchio with the ricotta and blend until you get a smooth cream. There is no need to add other liquids.

  • Cook the pasta in plenty of salted water and, in the meantime, cook the speck in a non-stick pan for 3-4 minutes until crispy. Pour the ricotta cream and speck into the pan and add the pasta, mixing for one minute over low heat. At the end of cooking, add the crispy speck.

  • Serve the dish piping hot. Given its quick preparation and cooking time, there’s no need to prepare it in advance, but it’s truly perfect as a last-minute recipe. To make it even more delicious and irresistible, you can add grated cheese to your liking.
