Why didn’t I try grilled pineapple before? It’s delicious and really easy to prepare. Imagine how good it is enriched with yogurt cream and pecan nuts: absolutely delightful and also light.
Moreover, it’s very elegant to serve as a dessert at the end of a meal. Plus, everyone is happy since you can use soy yogurt to make it vegan, perfect for those who are lactose intolerant. Personally, I would also offer it during holidays, the guests will surely appreciate it. Let’s see how to prepare it.

- 1 pineapple (enough for 8 slices about 1/2 inch thick)
- 1 cup cup soy yogurt (unsweetened)
- 2 tsp tsp brown sugar
- 1 tbsp tbsp agave syrup
- 1/4 cup cup pecan nuts
- 1 pinch cinnamon (optional)

Preparation
Here in the Netherlands, they clean the pineapple for me at the store and give it to me bagged, but obviously, if you use a whole pineapple, you’ll need to remove all the peel first, then proceed either by slicing it and removing the hard core or using the specific tool if you have one. However you decide, you should get 8 round slices about 1/2 inch thick. Then sprinkle them with half of the sugar on one side. If you like, you can mix the sugar with some cinnamon, as you prefer: cinnamon adds a lot of fragrance.
Preheat the grill and place the pineapple slices on it, sugar side down. Grill for a couple of minutes, then sprinkle with the remaining sugar and flip the slices. Let them brown for another couple of minutes.
In the meantime, mix the yogurt well with 2 teaspoons of agave syrup to obtain a smooth cream. If you want, you can do this in advance and place the yogurt cream in the fridge to firm up better.
Prepare the serving plate with two slices of grilled pineapple and then add some yogurt cream and a few crushed pecan nuts. Decorate as you like, I used some mint leaves to add more color and our dessert is ready.
The grilled pineapple was very popular here at home, and I believe it’s truly a good after-dinner dessert. It’s really quick to prepare, even in advance, and it’s good whether served hot or cold. Try it and let me know if you liked it.
