The super soft orange cake is an aromatic, very soft, and simple dessert to prepare. Perfect for breakfast, it is also a genuine snack for children.
Citrus fruits are wonderful fruits that give an intense aroma to desserts and creams. The grated peels make our doughs extremely aromatic, and it’s a pleasure to enjoy them. Over time, I have made many desserts with orange, among the most appreciated you can find the Camille, the muffins, the soft orange cookies and the orange caprese.
To make the cake soft and moist, I chose to include ricotta. It’s an extraordinary dairy product that gives cakes a softness that remains unchanged for days. If you are intolerant, you can use lactose-free ricotta since it is the only ingredient containing lactose in the cake.
The super soft orange cake contains seed oil, but if you want to replace it with butter, you can do so easily; just consider using 20% more. I’ll leave the substitution in the ingredients.

Ingredients
- 2 cups all-purpose flour
- 3/4 cup sugar
- 1 cup cow ricotta (firm and compact)
- 1/3 cup peanut oil (or 6 tbsp of softened butter)
- 2 eggs (medium)
- 1 packet baking powder
- 1/3 cup orange juice
- orange zest (grated, used the zest of a natural orange)
- 1 tsp vanilla extract
- 2 tsp butter
- 1 tbsp all-purpose flour
- to taste vanilla powdered sugar

- 1 Hand whisk
- 1 Cake pan springform, 9-inch diameter
- 1 Grater
Procedure
Pour the ricotta into a bowl along with the sugar and mix it very well, so it becomes soft and creamy.
Add the eggs, incorporating them one at a time, then the oil, orange juice, finally the vanilla, and grated orange zest.
In a large bowl, sift the flour with the baking powder.
Pour the liquids into the bowl with the dry ingredients, mixing the batter with the hand whisk.
The batter is ready. If you like, you can also add 3/4 cup of dark chocolate chips, which go perfectly with the orange.
Pour the batter into the buttered and floured cake pan. Bake the cake in a preheated static oven at 350°F for about 45 minutes.
Do the skewer test to check the cooking; if necessary, extend the baking time by a few minutes because each oven bakes differently.
If the surface of the cake tends to darken too much, cover it with aluminum foil.
The super soft orange cake is ready, let it cool completely, unmold it, dust it with powdered sugar, and serve.
