Orange and Mascarpone Bundt Cake

The orange and mascarpone bundt cake is a super soft cake, without butter and oil, easy to make.

Simple ingredients and lots of flavors for a perfect dessert for breakfast, snack, or as a meal’s finale, that can be prepared in a few minutes and is perfect with tea, milk, orange juice, or whatever you prefer.

Ingredients

  • 2 oranges (organic)
  • 4 eggs
  • 1 cup sugar
  • 3.5 tbsp milk
  • 1 cup mascarpone
  • 2.75 cups all-purpose flour
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of the Orange and Mascarpone Bundt Cake

  • Keep all the ingredients at room temperature for at least ten minutes.
    Wash the oranges, dry them well, grate the zest and squeeze the juice.
    Beat the eggs with the sugar using an electric mixer until they are fluffy and pale.

  • Add 3.5 tbsp of the freshly squeezed orange juice and the grated zest of the two oranges.
    Also add the milk and then the mascarpone little by little.
    Finally, add the flour and the baking powder, working the mixture until smooth and homogeneous.

  • Butter and flour a 9-inch diameter bundt pan and pour in the prepared mixture.
    Bake in a static oven at 350°F for about forty minutes: do the toothpick test to check its cooking; if it comes out dry when inserted in the cake, it’s done, otherwise leave it in the oven for a few more minutes.
    Unmold and let cool completely before transferring your orange and mascarpone bundt cake onto a serving dish.
    Decorate with powdered sugar as desired and serve.
