Quick Lunapark fritters are an irresistible treat that smells of celebration, sugar and joy. I made them on TV for all of you and you loved them!
An easy and quick recipe, perfect to prepare at home without brewer’s yeast and without eggs, ideal when you have little time but a big craving for something indulgent. My children are crazy about them! They adore them and when I make them they disappear right away!
These sweet sugared fritters without leavening are ready in minutes, with a simple egg-free dough and a golden fry that leaves them soft inside and crispy outside. Just like those at the amusement park, but homemade and in very little time!

Ingredients for the sugared fritters
- 2 cups 00 flour (all-purpose flour)
- 2 oz granulated sugar
- 1 teaspoon baking powder
- to taste vanilla extract
- 3 tablespoons soft butter
- 1/3 cup milk
- as needed peanut oil (For frying)
- as needed granulated sugar (For coating)
HOW TO PREPARE QUICK LUNAPARK FRITTERS
In a bowl pour the 00 flour, granulated sugar and baking powder. Mix all the dry ingredients well to distribute them evenly.
Add the soft butter cut into cubes, the milk and the vanilla extract. Start to mix with your hands until you obtain a homogeneous dough.
Transfer the dough to the work surface and work it a little more for a few minutes, until you form a soft and smooth ball, helping yourself with a little flour.Wrap the dough ball in plastic wrap and let it rest for 15 minutes at room temperature. This step will make the dough more elastic and easier to roll out, even without leavening.
Divide the dough into several parts; I divided it into 4 parts for 4 nice fritters. Roll each portion into the shape of a small pizza about 6 inches in diameter, leaving the edges slightly thicker. Help yourself with a little flour and a rolling pin.
Heat plenty of peanut oil in a high-edged pan. When the oil is very hot — it should be between 329°F and 338°F — fry the fritters a few at a time, turning them on both sides until golden.
Drain them on paper towels and immediately pass them in granulated sugar, covering them on both sides and the edges. And here they are: quick, easy, egg-free Lunapark fritters, absolutely delicious!

You can flavor the dough also with lemon or orange zest
They keep for two days in food-grade plastic bags. On the second day heat them for 1 minute at 320°F in a small oven or in an air fryer.
Excellent enjoyed hot, but also very good at room temperature.
Perfect as a Carnival dessert or an indulgent snack.
