This is an easy and wholesome recipe that wins over young and old with simple ingredients and lots of flavor. Fill it as you like also with other ingredients, for example with crescenza or scamorza cheese, or substitute the cooked ham with speck or mortadella.

Ingredients for a 9 1/2-inch pan
- 1.3 lb Potatoes (Already boiled)
- 1 egg
- 1.4 oz grated Parmigiano-Reggiano
- 3 tbsp milk
- 1 tsp fine salt
- to taste pepper
- as needed olive oil (For brushing the pan)
- as needed breadcrumbs (For the pan)
- 7 oz stracchino cheese
- 3.5 oz cooked ham
Steps
To prepare the potato pie with ham and stracchino, start by boiling the potatoes in plenty of salted water. Once cooked, drain them and mash them while still hot in a large bowl.
Add the egg, the grated Parmigiano, the milk, the salt and a sprinkle of pepper. Mix well until you obtain a soft and homogeneous potato mixture.Thoroughly butter a 9 1/2-inch tart pan and dust it with breadcrumbs. Pour the potato mixture into the pan, level the surface and bake in a conventional oven at 356°F for 25–30 minutes, until the base is golden.
Once baked, let the potato base cool slightly, then turn it out gently onto a baking sheet. Spread the stracchino and the cooked ham over the surface and return to the oven at 356°F for about 10 minutes, just long enough to melt the cheese.
Remove the savory potato pie from the oven and finish with chopped chives and a drizzle of extra virgin olive oil. Serve hot or warm.

You can substitute the cooked ham with speck or pancetta and the stracchino with mozzarella or scamorza for a different but still delicious version.
