Filet Mignon Stroganoff

After the Strogonoff de frango recipe and the Strogonoff de camarao, here is another gem of Brazilian cuisine, tasted in Trancoso during our April 2021 trip, at the chic restaurant “O’Cacau”: Filet Mignon Stroganoff.

The base is always the same: cream, tomato sauce (or ketchup), a pinch of mustard; the extra ingredient is the “file mignon“, meaning a tender beef tenderloin.
The classic accompaniments: batata a la palha and arroz (rice).

Ingredients

  • 1.1 lb beef tenderloin (filet mignon)
  • 3 cloves garlic
  • 1 tbsp mustard
  • 0.83 cup cooking cream
  • 5.3 oz mushrooms (optional)
  • to taste parsley
  • 1/2 glass tomato sauce (or ketchup)
  • to taste vegetable oil
  • to taste salt and pepper

Preparation

  • First cut the tenderloin into cubes and season the meat with salt and pepper to taste.

    In a skillet add a drizzle of oil and, once the pan is hot, add the meat in small batches.

    Cook it rare.

    After the meat is browned, lower the heat, drizzle with a little oil and set it aside.

    Then add 3 crushed garlic cloves in the same pan.

    If you decide to use mushrooms, add them too.

    Add the cream, the mustard and the tomato sauce. Finally, add the meat back in.

    Stir for a few minutes, and serve.
