Steamed Fish with Shiso and Seaweed

The Steamed Fish with Shiso and Seaweed is a traditional Japanese homemade recipe, translatable as: Shiromisakana no nikomi, shiso to kaisō soe 白身魚の煮込み、シソと海藻添え.

Shiso (or perilla) is an aromatic herb widely used in Japanese cuisine, both as a garnish and a main ingredient.

There are two main varieties: green (aojiso) and red (akajiso).

Green shiso, often called Oba, is used raw or cooked, added to salads, tempura, sushi, and sashimi.

Red shiso, which contains a pigment called cyanidin, is used to color and flavor pickled plums (umeboshi).

Its fresh and slightly spicy flavor, reminiscent of a combination of basil, mint, and cumin, makes it an excellent condiment for various dishes, including rice, soups, and noodles.

Ingredients

  • 2 fillets white fish
  • to taste fresh green shiso
  • to taste ginger
  • 2 teaspoons sake
  • 1 teaspoon sesame oil
  • to taste codium seaweed

Steps


  • Pat the fillets, remove any bones, lightly salt them, and let them rest for 10 min.

    If using dried seaweed, rehydrate in cold water for 10–15 min and drain well. If using fresh codium, rinse quickly in cold water and drain, and if salted, desalinate for 1 hour.

    Place a layer of seaweed on a sheet of parchment paper or cabbage leaf (optional).
    Place the fillet on top.
    Cover with shiso leaves and some julienned ginger.

    Pour over 1 tablespoon of sake and a drizzle of sesame oil.

    Place the packets in a steamer or on a basket.
    Steam for 7–10 min, until the fish is cooked but tender.

    You can serve with white rice and a side of Japanese pickled vegetables (tsukemono).
