When you really don’t have time to prepare a pizza dough, you can resort to tricks like this sandwich bread pizza. It’s very quick and easy to make and stays light if topped simply in the Margherita style.
Of course you could also omit the mozzarella or cheese, it would certainly be less caloric, but it would no longer be a complete meal and should then be used like bread to accompany a main course.
You can also make tasty pizza triangles to serve at buffets or parties as finger food. They are very flavorful both hot and cold, just like party mini pizzas, but for just 2 Weight Watchers points each.
I used long sandwich bread slices, not square sandwich loaf slices. But any type of soft bread will do, even better if you find a whole wheat version. One serving of sandwich bread pizza is filling and tasty — at home there wasn’t even time to cut the little triangles and take photos before they were gone. So what are you waiting for?

Ingredients
- 2 slices long sandwich bread slices (long slices of about 50 g each (about 2 oz))
- to taste Light pizza sauce (or simple tomato passata)
- 120 g light mozzarella (about 4 oz; alternatively 60 g (2 oz) of 23% fat cheese or 90 g (3 oz) of regular mozzarella)
- 10 g grated Parmesan (about 2 tbsp (or Grana))
- 3 teaspoons extra virgin olive oil
- to taste fresh basil
- to taste dried oregano
- to taste salt
- Points per serving = 8 WW points
- Points per triangle = 2 WW points
Steps
Prepare and weigh all the ingredients. If you won’t be using my Light pizza sauce recipe, mix tomato passata in a bowl with a bit of salt, oregano and torn basil. If you like, add a little garlic and onion powder. In the photo there’s the light mozzarella but later you’ll see the light Dutch cheese grated which, in my opinion, gives much more flavor for the same points: the choice is yours.
Place the two slices of sandwich bread on a baking sheet lined with parchment paper and lightly brush only one side with half a teaspoon of oil. Set aside the brush and the rest of the oil for later. Toast the bread slices for a few minutes in the oven at 428°F. Remove them from the oven, flip them and spread the sauce on the untoasted side of the bread.
Now place the cheese or mozzarella on top of the sauce, then the grated Parmesan and some extra dried oregano. Pour 1 teaspoon of oil per slice and, with the brush and the rest of the reserved oil, brush the edges of the sandwich bread. Bake at 482°F for about ten minutes, depending on your oven; the cheese should melt and the bread should toast well at the edges.
And here the sandwich bread pizza is ready. It smells just like real pizza — it was hard to wait for it to cool down enough to take the photos!
You can serve it hot as an alternative to Saturday night pizza or…
…cut into triangles, 4 from each slice of sandwich bread, to obtain tasty and light mini pizzas.
