Ingredients

  • 7 oz cookies (crushed)
  • 6 tbsp butter (melted)
  • 1 cup pastry cream (about 250 g)
  • 2 cups strawberries
  • 2 tbsp sugar
  • 1 1/3 tbsp lemon juice (about 20 ml)
  • 1 cup mascarpone (about 250 g)
  • 2/3 cup powdered sugar

Steps

  • Chop the cookies and mix them with the melted butter. You’ll obtain a sandy mixture; set it aside. Prepare the pastry cream following THIS RECIPE.

  • Whip the mascarpone with the powdered sugar until smooth. When the pastry cream is cold, fold it into the mascarpone little by little; you’ll get a soft, velvety cream.

  • Cut the strawberries into pieces, cook them with the sugar and lemon for 5 minutes, just long enough to soften them and form a syrup. Let cool.

  • Assemble the little glasses placing the cookie crumbs at the base, then alternate mascarpone, strawberries, pastry cream, mascarpone and strawberries, finishing with cookies.

  • Garnish with a strawberry and refrigerate until serving.
