Millet and Zucchini Patties

The millet and zucchini patties are a tasty, flavorful vegetarian main course, perfect for those looking for a light but satisfying alternative.

They are made with a mix of fresh vegetables such as zucchini and carrots, flavored with onion, ginger and chives, which give an aromatic and slightly spiced taste.

Millet, cooked together with the vegetables, creates a compact and nutritious base, while the addition of feta provides a salty, irresistible note.

Once formed, the patties are breaded and baked, resulting crispy on the outside and soft inside. Perfect both as a main course and as finger food, they are also ideal to prepare in advance and enjoy on any occasion.

Millet and Zucchini Patties

Ingredients

  • 3/8 cup millet
  • 1 1/4 cup water
  • 1 zucchini
  • 1 carrot
  • 0.4 oz feta (cubed)
  • 1 tsp ground ginger
  • 1 tsp chives
  • to taste breadcrumbs
  • to taste onion
  • to taste extra virgin olive oil
  • to taste salt
  • 1 egg
  • to taste flour
  • to taste breadcrumbs

Steps

  • To make the millet and zucchini patties, wash and trim the carrot and zucchini, then cut them into julienne strips.

  • In a pan, add a drizzle of extra virgin olive oil and the chopped onion. Place over heat and let the onion soften slightly.

  • Then add the carrot and zucchini, add the ginger and chives, season with salt and add a ladleful of water; cook for about ten minutes.

  • Add the millet and the water and cook for 15–20 minutes, as indicated on the package. Once cooked, remove from heat and let rest for 10 minutes. Then transfer everything into a bowl and let cool.

  • Once cool, add the feta and breadcrumbs until you obtain a compact mixture.

  • In a bowl, beat the egg with a fork and prepare two plates: one with flour and the other with breadcrumbs.

  • Using your hands, take a small amount of the millet mixture and form balls the size of a walnut. Coat the patties in flour, then in the egg, and finally in breadcrumbs.

  • Place the patties on a baking tray lined with parchment paper and bake in a preheated oven at 392°F for 15 minutes, until golden. Serve hot — enjoy!
