The couscous with radicchio, chicken and walnuts is a dish with a rich dressing and easy to prepare, ideal to enjoy as a main course and also for a packed lunch. For this recipe I sautéed the radicchio in a pan and grilled the chicken breast; then I combined everything and added walnuts. In just a few minutes you’ll taste a very flavorful couscous.

Ingredients
- 1/2 cup dry couscous
- 1/2 cup water
- 5 oz radicchio
- 5 oz chicken breast
- 10 walnut halves
- to taste leek
- to taste extra virgin olive oil
- to taste salt

Steps
To make the couscous with radicchio, chicken and walnuts, clean the radicchio, wash and dry the selected leaves and cut them into strips.
In a pan over low heat, soften the chopped leek with a drizzle of extra virgin olive oil. Add the radicchio, season with salt and cook until the radicchio has wilted; if necessary add a tablespoon of hot water.
Cut the chicken breast into strips and cook them on a hot griddle; when they are cooked and nicely browned, remove them from the griddle and add them to the radicchio.
In a pot (or bowl) pour the couscous and moisten it with the boiling water. Cover with a lid and let it rest for 5 minutes. Then use a fork to fluff the couscous.
Then pour the couscous into the pot with the dressing, add the coarsely chopped walnuts and mix to combine the ingredients.
Serve; if desired you can add grated Parmesan. Enjoy your meal!
