- 12 oz potatoes
- 7 oz zucchini
- 4 oz carrots
- 1/4 cup grated Parmesan cheese
- 4 slices sliced loaf bread
- 3 eggs (2 eggs for coating)
- 2 tbsp extra virgin olive oil

- 1/2 cup breadcrumbs
How to make vegetable croquettes
In a pan heat a drizzle of extra virgin olive oil, add the carrots cut into even cubes.
Add the zucchini cut into cubes, season with salt and pepper, and add the peas as well. Cook for about 15 minutes or until the vegetables are tender.
Boil the potatoes in salted water, then mash them and add salt, grated Parmesan and the egg.
Mix everything together and then add the vegetables you cooked earlier.
Once you have a well-homogenized mixture, wet your hands and shape the croquettes. Place a small strip of scamorza cheese inside each one.
Then coat them in breadcrumbs.
Place all the vegetable croquettes in the air fryer and drizzle with a little oil.
Cook at 392°F for about 12–15 minutes
Storage of the vegetable croquettes
This preparation can be stored in an airtight container in the refrigerator for up to two days. If you don’t want the gooey cheese center, you can omit it — they will still be tasty.
