Piadi-Frittata: The Tasty, Super-Fast Meal-Saver.
Do you know those days when time flies, the fridge is sad and you don’t feel like cooking? Well, the Piadi-Frittata is my clever solution, a cross between a piadina and a classic omelet, perfect as a lunch or dinner saver.
The great thing about this recipe is that you can customize the base as you like: you can use ready-made piadine, either classic or gluten-free, or make by hand my milk piadina or my olive oil piadina or even my yogurt piadina. It just depends on what you prefer and how much time you have!

  • 1 piadina (Italian flatbread)
  • 2 eggs
  • lettuce (as desired)
  • spices (to taste)

Steps for the Piadi-Frittata: the super quick and tasty meal-saver

  • Heat the piadina in a nonstick skillet for a couple of minutes per side. Remove it while it is still flexible to avoid tearing it when you fold it.
    Beat the eggs with a pinch of salt, spices to taste, or with 2 tablespoons of grated Parmesan.

    In the same skillet add a drizzle of oil and cook the omelet.
    Place the hot omelet on the piadina, add a generous handful of baby spinach (or lettuce) and fold.

  • All that’s left is to fold the piadina and enjoy it with great satisfaction.

Tips

If you want to make it even more indulgent, try spreading a thin layer of fresh cheese (such as stracchino or goat cheese) on the hot piadina before placing the omelet.
